It was in the first week of January 2015 that our timing, ingredients and equipment lined up to make Marcella Hazan’s Cotechino with Lentils for a New Year’s Feast. Having learned that the cotechino (pronounced coh-teh-kee-noh) is a remarkably unavailable grocery item here in our city, it was up to Ben and me to hand-make the sausage for this traditional Italian dish that is said to bring prosperity if eaten on New Year’s Day.
I’m going to jump ahead and share that we didn’t eat this dish on New Year’s Day. We didn’t even eat it that January. Instead we ate it 10 months later, on October 23. It was a chilly fall day and we were finally ready to appreciate our lovingest—and most frustrating—cotechino sausage….
